All I know about is Touch the Dead for the Nintendo DS, and the Resident Evil games for the Wii and the Playstation.
I am rather disappointed in the Wii version which is basically a rail shooter rehash of the first four games.

The Wii game you speak of, RE: The Umbrella Chronicles, is based heavily on Survivor, which itself was a lightgun game. That is why it is basically an on rails shooter. Although from what I have read it isn't quite as linear with the ability to open locked doors by blasting them off their hinges allowing you to take branching routes, or the fact it also contains some mild RPG elements similar to previous RE games. It could be quite good, all be it quite linear in nature.
The other Wii RE game is a port of RE4, but like the PS2 version this contains additional side missions playing as secret agent Ada Wong.
If you haven't played a classic game in years, it's never too late to start!
