The A600 supports exactly the same file systems as any other Amiga. The only limitation is the 68000 CPU as the best file system, SFS, required at least an 020 to work.
Using a patch from Aminet you can normally utilise the first 8GB of HDD space using the standard FFS. Each partition must be 2GB of less, but there is no limitation to the number you can have.
There are also other third party file systems you can try. The commercial PFS (Professional File System) is the other main one that will work. It was originally commercial and you had to buy it, but it has since been releases for free on Aminet under a BSD license. http://en.wikipedia.org/wiki/Professional_File_System
