Yes, they could. That's why I set up the screen lock, your phone may well have something similar. A four digit code to hide everything in my phone (emails, contacts, notes etc) is about enough for most purposes I would say.

Having to enter passwords for mail, facebook, other things would be too much of a pain in the ass for me. YMMV, obv.
